Palmer Quimby was born in Charleston, but made his rounds through Iceland, Florida, Maryland, and then Iceland and Florida again before finally making his way back to Charleston. No matter where he lived, he always felt that Charleston was home. Starting in the hospitality/restaurant business as a teen, Palmer honed his craft for 20 years through hard work and dedication. He has had many teachers along the way, for whom he stays very mindful and thankful. Everything has brought Palmer to where he is today. He is humbled and appreciative to be doing what he loves as the owner and operator of Munkle Brewing co.
Q: Please tell us a little bit about your family.
I have a very large, close knit family here in Charleston, and we all enjoy hanging out as often as possible.
Q: Please tell us about your current, past, or future career. What do you love most about what you do?
I followed in my father’s footsteps, diving head first into the restaurants business. I think Charleston has an amazing, ever-growing, ever-evolving restaurant scene. I love that I still get to work with all of the amazing restaurants and bars all over the state. The beer we make is meant to be enjoyed with family, friends, and great food.
Q: What are a couple of your favorite restaurants in our community?
Way too many great restaurants in Charleston to only name a few. I’m very excited about the ever growing diversity and food options here in the city I call home. The more types of food we have, the better. Also very proud of how most people here in the community support locally owned businesses and try to keep the corporate giants out.
Q: How long have you lived or worked in our community?
On and off since 1979. Most recently, I have been back in Charleston full time since 2007.
Q: Who is the most interesting person you’ve met here in our community?
To this day the most interesting person I have met in Charleston is Philip Simmons, the local artisan and blacksmith. He passed away in 2009, but you can still see his passion and hard work all over this city.
Q: If you could travel anywhere in the world right now, where would it be and why?
I would love to make it back to Belgium. There you have has access to many other great countries and some of the best beer in the world.
Q: What is one of your favorite movies? TV shows?
I love anything food and beverage related. Always been a Star Wars fan, so it has been fun reliving some of my childhood favorites with all of the new shows coming out.
Q: What advice would you give to people?
Find what you love to do, and surround yourself with good people. Work hard for what you want everyday, and it will happen. And please don’t forget to laugh, share, and love along the way.
Q: What is something on your bucket list?
I would love nothing more than to unplug and disappear for a solid month. Anywhere that I would have no access to the outside world.
Q: What is your go to band when you cant decide what to listen to?
Lately it has been Khruangbin and Leon Bridges’ new album.
Q: What current or former local business makes you the most nostalgic about our community?
Community Supported Grocery. They prioritize low-income/low-access neighborhoods, making our local food economy more equitable, convenient, and scalable– all while supporting our local farmers.
Q: If you could choose anyone that is alive today and not a relative; with whom would you love to have lunch? Why? And where locally would y’all meet for this lunch?
I would love to grab a beer with Garrett Oliver at Salty Mikes. The man is an absolute legend in the craft beer industry and is one of the reasons I am where I’m at today.
Q: What is your favorite thing or something unique about our community?
The Gullah-Geechee culture and it’s ties to the past, present, and future. From the farms of the barrier islands to the tidal creeks and oceans our local food comes from. We must recognize and acknowledge the past here in the present to make sure the culture can continue to shine in the future.
Q: Where do you see yourself in 5 to 10 years?
With more continued growth and success I hope to be on top of the brewing world. Being the one of the best breweries in the South and the East. Continuing to make and share world class beer with all.
Q: (Even for friends or family), what is something interesting that most people don’t know about you?
I like to relax by cooking with my beautiful bride.
Q: What is the most beautiful place you have ever been?
Iceland. It’s still the greenest place I have ever seen.
Q: Favorite month? favorite holiday? and best single day on the calendar?
Probably July; I just love the summer time. 4th of July. Best day would have to be March 25th.
Q: What would you rate a 10 out of 10?
Chubby Fish. Every-time I visit I’m blown away by the food.

My future bride
Q: What is one or two of your favorite smells?
The smell of beer brewing gets me every time. A close 2nd would be pluff mud.
